Wanluan Pig’s Knuckles
The wafting aroma of pig’s knuckles represents a pinnacle of gourmet cuisine. The rich fragrance of the sauce permeates the skin, which is chewy with a hint of crispness, while the meat is tender and springy. A famous Taiwanese snack, Wanluan pig’s knuckles originated in Wanluan Township, Pingtung. The freshly braised skin is deeply flavorful, soft yet elastic, and never greasy, while the meat remains tender with a pleasant chewiness. In addition to the signature braised knuckles, shops also sell braised pig tails, tongues, ears, hooves, sausages, pork slices, and pork floss. For personal consumption rather than gifting, you can choose a whole knuckle to be weighed and sliced on-site; leftovers can be packed to go and easily reheated at home. Notable establishments include Haihong Restaurant, Li Family, Lin Family, Wanjia, Wantai, Bear House, Yixiang, and Big Figure. Among them, the earliest was Haihong Restaurant, founded by Lin Hai-hong in 1949. It is said that in 1981, then-President Chiang Ching-kuo visited the old Wanluan market and dined at Haihong, which propelled the dish to national fame. Other popular dishes include crispy fried oysters (served with ketchup and pepper salt) and stir-fried clams with basil (sautéed with garlic, scallions, and onion shreds), featuring plump and delicious clam meat.
